Why 320 and not something cleverer
MP3 at 320 kbps is what every piece of DJ hardware and software plays without argument. It is the format for the USB stick. Files up to 300 MB are accepted, which covers a ten-minute 24-bit 96 kHz WAV.
Tags that survive
Tags are written as ID3v2.3, the dialect the DJ software actually reads, so your BPM and key analysis do not have to be redone.
